Old World Coffee Roasters is looking for a Retail Manager to take the helm at two of our most dynamic locations: our flagship Midtown café and our Sierra Medical Center (Hospital) location. The Role

The Retail Manager oversees day-to-day operations and financial performance at assigned café locations. This is a hands-on leadership role - you'll split your time between the floor and the numbers, driving profitability while building a team culture that reflects our values. The right person for this role takes genuine ownership of outcomes, not just tasks.

Key Responsibilities

  • Financial Management: Monitor and manage COGS, labor, and overall margin at each location. Identify cost inefficiencies and implement corrective actions quickly.
  • Team Leadership: Hire, train, schedule, and develop bar staff. Lead by example on the floor - minimum two full bar shifts per week. Foster a culture of accountability, hospitality, and growth.
  • Operational Excellence: Maintain high standards of cleanliness, consistency, and customer experience. Create and manage schedules that balance coverage with labor targets.
  • Reporting & Strategy: Review financial reports regularly, track performance against targets, and bring actionable recommendations to ownership.
  • Culture & Standards: Uphold OWCR's values across every customer and team interaction. Act as the culture carrier for your locations.
Performance Targets

  • COGS: ≤28% (target) | ≤30% (baseline)
  • Labor: ≤24% (target) | ≤30% (baseline)
  • Profit Margin: 16% at 3 months → 20%+ long-term goal
Qualifications

  • 2+ years of experience leading teams in coffee, food & beverage, or retail
  • Working knowledge of COGS, labor percentages, and P&L basics
  • Strong communicator who can give direct feedback and build trust with a team
  • Comfortable working bar shifts alongside staff - this is a working manager role
  • Food Protection Manager certification required within 30 days of start date
Schedule

  • Typical week: 30-35 hours, with occasional 50-hour weeks during high-demand periods
  • Includes a minimum of two bar shifts per week
Compensation & Growth

Base salary: $52,500-$58,000 DOE, paid on standard payroll schedule.

Performance-based commission: Quarterly bonuses tied directly to location profitability - structured to meaningfully reward strong margin management. Annual commission potential ranges from approximately $3,000 to $19,000, depending on performance.

Growth path: As Old World Coffee grows, we anticipate building toward a COO/Integrator role. Candidates who demonstrate consistent financial performance, team leadership, and strategic thinking will be considered for that path.

This means we make sure to source high quality coffees that are grown and processed in ways that ensure quality. At our roastery we seek to roast coffees in a way that respects and highlights work put into them during growing and processing. Our shop is the final step. Here we get to display all that quality and hard work across many different brew methods and beverages. This can be anything from a precision, hand-brewed coffee to using the coffee as a primary ingredient in one of our specialty drinks.
